If you have any leftover roast chicken or turkey, use it here. 1 long seedless cucumber or 1 pound regular cucumbers 1. Wash the seedless cucumber, split in half lengthwise, and slice on the diagonal, ¼ inch thick. If using regular cucumbers, partially peel, leaving strips of green skin, split in half lengthwise, and with a teaspoon scoop out the seeds and discard. Slice on the diagonal, ¼ inch thick. 2. In a small bowl, gradually stir ¼ cup cold water into the peanut butter and mix with a rubber spatula to make a smooth paste. Add the salt and sesame seed oil. Set aside. 3. When ready to serve, mix the cucumber slices with the shredded chicken and peanut dressing.
