It’s amazing how everyday ingredients take on a whole new character with just a little of this extraordinary seasoning. This family style dish is not usually served at banquets. It is not considered elegant enough because the dark sauce covers the coral shrimp. At home it is enjoyed with great relish. 1 pound large shrimp, shelled 1. Cut a slit along the back of the shrimp and pull out and discard the intestinal vein. Rinse the shrimp in cold water, drain, and place in a bowl. Mix well with the sherry and cornstarch. Set aside. 2. Heat the oil in a wok or stir-fry pan over high heat until hot but not smoking. Dip a spatula into the shrimp and then into the oil; it should sizzle. Add the scallions, gingerroot, garlic, and black beans and stir a few times. Mix up the shrimp again and add it to the pan. Stir constantly. Add 2 tablespoons of water and cook until the shrimp is opaque, about 2 minutes. Taste the sauce and add salt, if desired. Serve immediately.
