Shredded Pork and
Mustard Greens Soup

Chinese mustard greens are appreciated for their thick, green curved stems and distinctive, slightly bitter taste. They are available in Chinese markets and often have their leaves severely trimmed, leaving a rather ragged looking loose cabbage heart. Add mustard greens to soup only just before serving, or they will overcook and turn yellow.

1/3 cup shredded lean pork (3 ounces) (page 44)
2 teaspoons light soy sauce
1 teaspoon cornstarch
½ teaspoon dry sherry
¼ pound Chinese mustard greens
5 cups Chinese chicken broth (page 64) plus 1teaspoon salt or
1 (13 ¾ -ounce) can chicken broth and enough water to make 5 cups
2 slices unpeeled gingerroot, 1 X 1/8 inch each
¼ teaspoon salt, or to taste

1. Mix the pork, soy sauce, cornstarch, and sherry together. Set aside.
2. Wash the mustard greens under running water and shake off the excess water. Cut the leaves and stems into 1-inch pieces. You should have about 1 cup.
3. Bring the chicken broth and gingerroot to a boil in a 2-quart sauce pan over medium high heat. Stir in the pork and bring the broth back toa2 boil. Stir in the mustard greens and cook for 1 minute. Salt to taste. Serve hot.
